中文摘要 臺灣被稱為「水果王國」，是眾多水果生長的天堂。以臺灣鳳梨、洛神花及油甘等在地食材，融入法式甜點製作方式，不僅在口味有所創新，亦可增加產品優勢，如開發成在地性伴手禮商品，可藉此提升農業及觀光相關產業的經濟收益。 本研究以滾雪球方式進行線上問卷調查，期間為2020年3月1日至3月7日，藉此瞭解消費者對臺灣農特產甜點伴手禮之需求及屬性偏好。共發放350份問卷，扣除無效問卷5份，取得有效問卷345份，問卷回收率為98%。經參考消費者意見調查結果，總計開發六款臺灣在地農特產的甜點有:法式布列塔尼鳳梨糕、法式布列塔尼洛神花糕、法式布列塔尼油甘糕、法式焦糖奶油鳳梨酥、法式焦糖奶油洛神花酥

和法式焦糖奶油油甘酥等。接下來由30名消費者對這六款甜點進行感官品評，結果顯示得分皆在3分以上，尤其法式布列塔尼鳳梨糕，法式焦糖奶油鳳梨酥，得分超過4分。感官品評結果，亦指出這六款具臺灣在地特色農產的法式甜點伴手禮，均能被消費者所接受，故本研究所開發之伴手禮皆具有市場潛力。 本研究希冀提供所研發的六款法式甜點之標準配方與製作方式，以作為糕餅業者或伴手禮相關業者在製作法式甜點伴手禮的重要參考。此外，本研究還設計法式布列塔尼洛神花糕的教學體驗活動，透過DIY體驗活動，不僅可作為糕餅業業者或教學單位在辦理實作活動時參考，亦可推廣在地性食材伴手禮，是拓展臺灣農產品伴手禮市場最佳的行銷方式之一。關
