台灣位於環太平洋地震帶上,擁有豐富的溫泉資源,自2001年起全面實施週休二日後,國人休閒時間增加,國內旅遊風氣隨之提高,泡湯文化日益興盛,如今的溫泉旅館不單只有提供泡湯,亦設立許多溫泉相關設施,並與飲食做搭配,提供遊客多元的選擇。而現今的飲食不再只是講求吃飽喝足,亦被視為是豐富個人生活經驗的方法,在旅遊過程中,品嚐美食是認識當地文化的最佳媒介,藉由品嚐食物得到歡樂,進而使觀光客對地方產生一種特殊的情感。可見飲食在旅遊中占據重要的地位,飲食觀光也可視為是人類幸福感的來源之一,當遊客前往溫泉區泡湯並享用美食時,亦成為一種新奇的體驗。因此,本研究以台南關子嶺為研究範圍,主要目的為探討溫泉旅館遊客美

食消費動機、幸福感與趨新飲食間之關係。採立意抽樣的形式,針對一年內曾去關子嶺溫泉區消費者,且年滿18歲以上之遊客進行問卷發放,問卷回收後以SPSS及AMOS統計軟體進行資料分析,資料分析方法包含:描述性統計、信度分析、單因子變異數分析、獨立樣本t檢定、相關分析、結構方程模式等。結果顯示遊客美食消費動機會正向影響幸福感;趨新飲食對美食消費動機與幸福感之關係具有調節的效果,樣本基本資料與消費特性對幸福感有部分顯著差異。根據研究結果提出具體之建議,以供溫泉旅館業者及相關餐飲業者,作為日後行銷管理之參考。

台灣觀光旅遊產業持續成長,旅館數量也大規模的成長,造成環境各方面的負面衝擊。然而,因綠色消費意識抬頭,使得遊客在選擇住宿時,希望挑選具有綠色概念及實際環保作為的旅館。而休閒旅館常位在風景優美的渡假勝地,對於所在地更易造成環境、生活、文化…等衝擊,其所發展之綠色品牌準則值得探討深究。本研究首先透過相關文獻探討與修正式德菲法 (Modified Delphi Method) 來找出休閒旅館發展綠色品牌的評選準則,接著應用層級分析法 (Analytic Hierarchy Process) 來決定準則的相對權重。研究結果發現,在評選休閒旅館綠色品牌時,最重視的主準則依序為綠色產品/服務、綠色政策與

管理與綠色信譽。將15項次準則加以排序後,以環境保護的權重最高,次之是綠色認證、環境管理、員工綠色共識、綠色設計及建立綠色企業文化…等。此模式欲提供相關單位客觀且有效的方式來評選休閒旅館之綠色品牌,也期望在學術及實務上有一定的價值及貢獻。
